Once again I’ve been caught rummaging around the discount counters and this time got my hands on some reduced sweet potato. I wanted to do something different with (other than soup ahem) and I just wasn’t in the mood for mash. So after a quick wander around the supermarket afterwork I picked up some extra ingredients of cherry tomatoes, chorzo, a lemon and a bunch of coriander.
I put the whole lot together for a warm salad of sweet potato, cherry tomatoes and chorizo, garnished with lots of fresh coriander, olive oil, lemon juice, salt & pepper. I roasted the sweet potato and pan fried the chorizo so it was lovely and crispy. This spur of the warm salad was lovely and is something I’ll definately be making again. Hell I might even splash out and pay full price for my veg I enjoyed it so much!
