Egg Noodles with Teriyaki stir fried vegetables: A meal for when you just don’t have time (or energy).

Work’s been pretty busy of late post Chrstmas and New Year and I’m also getting back into going to the gym after work (yes I’m one of those people). Sometimes after a full day sat at my desk I just want to stretch my legs and move! However, it also means that I’ve been getting back to the flat quite late (and ravenous) and I’ve been looking for some quick fix dinners because the last thing I want to be doing is coming back to slave over dinner for an hour. I’ve also been trying to keep dinner relatively healthy (yes, again one of those people) as not to undo all the work I’ve just put in at the gym.

Tonight I went to my first boxersise class (ouch) and I can already tell you that tommorrow I will have great difficulty in lifting my arms to even dress myself. So before the muscle ache fully kicks in I managed to make some egg noodles with teriyake stir fried vegetables.Teriyaki is a traditional japanese mix of soy sauce, mirin and sake.

So quick (about 10 mins), so easy and pretty healthy. Plus I had some teriyaki stir fry sauce kicking around my cupboard. It was delightful and is a meal I can see myself returning to as a fall back during these cold dark winter nights, when you just want to come home and curl up under a blanket and watch the TV. What’s you go to meal when you just don’t have the energy?

 I used egg noodles, they take around 3-4 minutes to cook in boiling water.

You can choose your favourite vegetables to stir fry, I love stir fried broccoli and also included mange tout, mini corn, red pepper and onion. I boiled the broccoli and mange tout for a couple of minutes before adding in just to soften. The vegetables only need to be stir fried for about 5 minutes, it’s nice to have them slightly crunchy!

Add in stir fry sauce of your choice, mix in the cooked noodles and you’re done and ready to sit down for the night (apart from the washing up unless you leave it until the morning like me!)
