I love mexican, fajitas in particular. In fact I’d go as as far to as to say that if I were banished to a desert island where I could only eat a handful of dishes for the rest of my life, fajitas would be on the list.However, I often find myself, as I did this weekend, with stale tortilla wraps I didnt manage to eat that were going slightly hard around the edges. Never quite sure what to do with them I decided to incorporate them into breakfast this week, and man, was I in for a treat.I’ve had fried tortilla wraps before at a pub in the form of nachos and I guess is my inspiration for this dish. I cooked up some creamy scrambled egg, lightly fried the tortillas in a little oil until golden brown and cripsy and sliced up some juicy and sweet cherry tomatos. Served with a dollop of creme fraich/sour cream on top and some black pepper.
